Music is beautiful isn’t it? The team at CymaScope visualized the dynamic sounds of the piano’s first strike and the eventual plateau and decay phase of different notes. You can listen to the sounds here and watch as the geometric shapes come to life.

There are no dumb questions on this blog, my friend! I’ll bet a bunch of people are currently reading this thinking MAN I’D REALLY LIKE TO KNOW THAT TOO.

So, let’s talk CHEMISTRY. When onions are grown, they absorb sulfur from the earth, which creates a kind of volatile, organic molecule called amino acid sulfoxides. These form sulfenic acids in the onion cells, and they’re kept separate from enzymes (complex proteins that cause chemical changes). By cutting an onion, you’re actually breaking its cells—so enzymes are now free to mix with the acids. Together they form a sulfur gas called propanethiol S-oxide, and this wafts right up towards your eyes without mercy.

When it reaches them, the gas reacts with the water in your eyes and forms a mild sulfuric acid, which is what causes the REALLY irritating pain. As a defence mechanism, you reflexively tear up to wash the irritant away.

So when you cry, it’s not due to being emotional about cooking, it’s because you have SULFURIC ACID IN YOUR EYES.

That’s pretty badass.

Huh, chewing gum is a weird one, and probably not as effective as other methods. But most tips are actually helpful because they either minimise the amount of sulfur gas getting to your eyes, or minimise the amount released in the first place. MOST USEFUL TIPS:

Refrigerate the onions, because it slows down the chemical processes. Don’t freeze them because honestly how’re you going to cut them if they’re rock hard

Use a sharp knife so you do minimal damage to cell walls—a dull knife crushes more of the cells

Move onions away from you as soon as they’re cut

Cut the onions underwater, because water will dissolve sulfur compounds

Light a candle near your cutting board—the heat will draw the gas away

Leave the root end on until the very end instead of cutting it off first, because the sulfur compounds are concentrated there

Wear safety goggles. Cooking is serious business.

Badass Scientist of the Week: Caroline Herschel

Caroline Herschel (1750-1848) grew up in Germany, as the daughter of a professional musician. Her father gave all his children a broad basic education in art, music, and science. His wife did not approve of educating her daughter, and when her father died, Caroline’s mother put her to work in the kitchen. Caroline had had several childhood diseases that had left her slightly disfigured, and her mother didn’t think she’d be good enough to marry, so she settled on a life of housework for her daughter. Meanwhile, one of Caroline’s older brothers, William Herschel, had moved to England, where he was working as a composer and music director, and built telescopes in his spare time. When he found out that his mother had put his sister to work as a servant, he invited Caroline to move in with him in England. She did, and quickly got a successful career as a singer. While Caroline stayed with William, he made a discovery that would change both of their lives. Using a telescope he built himself, William Herschel discovered the planet Uranus in 1781. He was hired by King George III as “King’s Astronomer”, and quit his music career to devote all his time to science. Caroline helped him out, first by cleaning lenses and taking notes, but later with astronomical observations of her own. She discovered a number of comets, including one that was named after her, and as reward for her work, the state paid Caroline a regular stipend, making her the very first woman to receive a salary for scientific work.
